Unicorn Poo Meringues

Perfect for a magical unicorn theme party

One day during the school summer holidays, my friend’s two little girls came over for the day which meant I had five kids to look after ranging in age from almost two to eight.  Half girls and half boys, magical unicorns and the talk of poo were a hit before we had even started baking.  These would be great for a unicorn, fairy or rainbow themed birthday party and they’re lots easier to make than I had anticipated.  Fancy having a go?  Here’s how to make unicorn poo meringues.

Unicorn Poo Meringue Ingredients:

  • 4 large egg
  • 100g white caster sugar
  • 100g icing sugar
  • Food colouring gels (not the liquids)

You will also need a couple of baking trays, baking/parchment paper and a large piping bag with nozzle.  If you’re doing this with kids and don’t have mega muscles then an electric whisk makes light work of beating the egg whites for the unicorn poo meringues.  I’ve got a hand me down stand mixer from my grandmother in law in it was ideal as the kids could all take turns switching in on and watching the beaters.  Finally make sure everything you’re using is squeaky clean.  I usually give my mixing bowl and beaters a quick wash so that there are no traces of grease on them.


How to Make Unicorn Poo Meringues

  • Unless you have incredibly patient kids and can post those idyllic photos of quality baking time together on Facebook, then my top tip is to get everything ready before you start or involve your children in this step as a game.
  • Pre heat the oven to 120c / 100c fan and line a couple of baking tins with parchment.
  • Draw 25 circles on the paper approx. 4cm in diameter.  I didn’t have a 4cm cutter so I just took a ruler and wondered about the house measuring circles until I found the top of a large bubble mixture pot that was about the correct size.
  • Separate the eggs and keep the whites.  You don’t need the yolks for this recipe.
  • Beat the egg whites until they form firm peaks.
  • Keep beating and gradually add in the caster sugar.
  • Once all the caster sugar has combined, repeat adding the icing sugar in slowly, the mix should now look glossy.
  • Pop your piping bag with nozzle into a large jug or tall container to make it easier to fill.

  • Squeeze up a line of food colouring gel from the nozzle to the top.  I found this part a bit tricky but I don’t think it matters if you’re not very neat. Repeat with 2 or 3 other colours.
  • Spoon the meringue mix into the piping bag.

  • Pipe swirls using the circles you drew as a rough guide.  My kids did pretty well at this, it just takes a little practise to hold the bag gently near the bottom with one hand and to squeeze firmly at the top while swirling it around.  The trick is not to swirl too fast and you have more control.  Who said unicorn poop had to be perfect anyway!
  • Bake the meringues in the oven for 20 mins and then turn the oven down low to 100c/ 80c fan.  After that, turn off the oven and leave the meringues there until they have cooled.
