Salmon Bites

My youngest has never been a fan of any kind of fish, but has started to eat a little since starting school lunches.  Every few weeks they have salmon nuggets so I though I’d try and recreate a healthy homemade version.   You could add in some finely chopped chives, especially if preparing as a family meal, but for a first try I decide to avoid in case they were rejected.  On serving, I was faced with slightly sceptical faces from my boys but dinner was soon polished off.

This recipe makes enough to feed 3-4 kids but you’d probably need to double it up if you were making for a family of 4 or 5 with hungry adults included too.

You Will Need:

  • 1 regular can of tinned salmon
  • 60g panko breadcrumbs
  • Juice of 1/2 lemon
  • 1/2 tsp mustard
  • 1 egg
  • A little oil

How to make Salmon Bites:

  • Remove the salmon from the can and break up with a fork.
  • Add in the breadcrumbs, egg, mustard and lemon juice and mix well.  The mixture should hold well together so add a little more breadcrumbs if it feels too moist.
  • Form the salmon mixture into balls and flatten slightly to create a nugget shape.
  • Heat a little oil in a frying pan over a medium heat and then cook the salmon bites on each side for a few minutes until golden brown.
